I wasn't going to do any cooking this weekend . .

Or so I thought. Torri at work told me I'd have lots of time to bake since I was going on vacation, I told her she was out of her mind- I didn't have time to cook! Well I had leftover phyllo dough, puff pastry, prosciutto, pie crust. I also had bought turkey Italian sausage, peaches, blueberries spinach and feta cheese. Added some other ingredients, and here's what I came up with.


Breakfast-
Blueberry muffins, will make another batch on Sunday, but will add the streusel topping, this was from the Betty Crocker cookbook.









The rest of breakfast was Belgian waffles with a cinnamon apple concoction, wanted to use up the apples, and the last packet of waffle mix. Also, had a side of bacon.


















Dinner was ravioli basil, tomato and mozzarella, topped with a simple sauce of-
*turkey sausage sauteed in garlic and onions
*fresh tomatoes
*a smidgen of cream
*mushrooms
*leftover prosciutto
*basil and oregano, from my garden
a splash of pinot grigio and chicken broth- and of course, Parmesan cheese.

Included a salad and bread sticks from the Barefoot Contessa- Barefoot in Paris. [badda bing---dinner]


FOR DESSERT- i know this will make Torri, pea green with envy!!!!

Peach pie, using the leftover pie crust, on the bottom, and a crumble mixture on the top- incredibly good, we added vanilla ice cream for a finishing touch.























Here's a wittle chicken, Cornish game hen actually, for mom to have while we're on vacation. Ain't it cute?Baked until golden brown can't you tell! I squeezed on some lemon juice, added some salt, pepper, fresh thyme and rosemary, from the garden again. Some butter, white wine and chicken broth, and then threw in the lemons for good measure- bon appetit.

Up for Sunday, Crispy Scallops with Chipolte tartare sauce, and spinach feta triangles in phyllo dough, and whatever else we can come up with!

Speaking of bon appetit, I found a 1st edition of The Art of French Cooking at the Logenberry Bookstore in Cleveland, except for the $45 price tag, I was very tempted, but I resisted.
